The Vostilidi is cultivated in a vineyard in the Eleios area, at an altitude of 350m, on clayey-sandy soils. To the north, it is protected by the imposing mountain range of Ainos, while to the south and west, it is open to the beneficial influence of the winds. The 20-year-old vines are traditionally shaped in a goblet form and are cultivated dry using manual methods. The Muscat is grown on a clayey-sandy slope of Agonas, at an altitude of 300m, within the PDO zone. The sea breeze of the area helps preserve the freshness and natural acidity of our grapes.
The grapes are hand-harvested in small crates during the early morning or late afternoon hours and transported to the winery in our refrigerated truck to avoid damage and oxidation. Before processing, the grapes are cooled in a chamber to better preserve the fruit. The process begins with strict sorting, removing any unhealthy grapes. We only ferment the must from free-run juice, using selected neutral yeasts, gentle methods, and as naturally as possible to allow the variety and terroir to express themselves. We carry out classic white winemaking in small-volume tanks (1-2 tons) without artificial additives for enhancement or clarification. The fresh wine matures and stabilizes with a 6-month lees contact (Sur-lee method) and is bottled unfiltered to best preserve its character.
Its fresh character is elegant, complex, and intensely fruity, with a crisp, well-balanced acidity and an enjoyable, long aftertaste. With aging, the dynamic herbal character of Vostilidi becomes more pronounced, offering great complexity.
