From a selected, single, old, pre-phylloxera vineyard in Paliki, aged over 60 years. The vines are located within the PDO zone at an altitude of 300 meters, and the soil is clayey-sandy. The grapes are extremely small-berried and highly concentrated, with a yield per hectare that does not exceed 500 kg per stremma. The vines are trained in the traditional goblet shape and cultivated dry-farmed with gentle manual methods. The sea breeze from the Lixouri Bay beneficially cools our grapes during the hot summer months. The surrounding vegetation consists of olive trees, lentisc, and licorice.
Area: It is located in the Sularoi area of Paliki, Cephalonia, within the PDO zone of the sweet Muscat of Kefalonia.
Its cultivation is dry-farmed, with a goblet-shaped formation, and is carried out manually using gentle methods.
The grapes are hand-harvested in small crates during the early morning or late afternoon hours and transported to the winery in our refrigerated truck to avoid damage and oxidation.
The grape is exceptionally small in size and small-berried. The process begins with strict sorting, removing any unhealthy grapes. We carry out classic red vinification in two small-volume stainless steel tanks (1 ton), with a long maceration of the skins and frequent manual punch-downs. During maceration, some whole grapes are included. The young wine matures for 18-24 months in two French oak barrels and is bottled unfiltered to best preserve its character, without any artificial additives for enhancement. After bottling, it remains in the bottle for 6 months before being released to the market.
An extremely rare dry Mavrodaphne, expressed in the simplest and most typical style, offering the full potential of the variety and the magic of an exceptional terroir. It is suitable for long aging and requires extended decanting before serving.
