From the rare and versatile Zakynthino variety and from the few remaining old pre-phylloxera vineyards of southern Kefalonia. The vineyards are located at an altitude of 350m, and the soil is clayey-sandy, clay-loamy, and clay-humic. The yield from our old vines is very low, 500 kg per stremma, offering highly concentrated fruit. The vines are traditionally shaped in a goblet form and are cultivated dry with gentle manual methods.
The grapes are hand-harvested in small crates during the early morning or late afternoon hours and transported to the winery in our refrigerated truck to avoid damage and oxidation. Before processing, the grapes are cooled in a chamber to better preserve the fruit. The process begins with strict sorting, removing any unhealthy grapes. We only ferment the must from free-run juice, using selected neutral yeasts, gentle methods, and as naturally as possible, allowing the variety and terroir to express themselves. We carry out classic white winemaking in small-volume tanks (1-2 tons) without artificial additives for enhancement or clarification. The fresh wine matures and stabilizes with a 6-month lees contact (Sur-lee method) and is bottled unfiltered to best preserve its character.
The fresh version fills the mouth with white-fleshed fruits, citrus, wildflowers, and herbs. The rich body, combined with its naturally high acidity and elegantly phenolic character, creates a unique wine with great aging potential.
