The vineyards are located in exceptional areas of the zone, primarily Fagias, Troiannata, and Lakomatia, at an altitude of 500-650m, on slopes with steep inclines and intense limestone soil. From the Fagia slope participate almost all of the surviving pre-phylloxera vines, with an average age of 45 years. The plants are shaped in the traditional goblet form and are cultivated dry (without irrigation), using gentle methods and manual tools. The wine includes several organic and estate-owned vineyards. Their yield is exceptionally low (400-500 kg per stremma), offering even greater concentration of compounds in the fruit.
The grapes are hand-harvested in small crates during the early morning hours and transported to the winery in our refrigerated truck to avoid damage and oxidation. Before processing, the grapes are cooled in a chamber to better preserve the fruit. The process begins with a strict sorting, removing any unhealthy grapes. We only ferment the must from free-run juice, using selected neutral yeasts, gentle methods, and as naturally as possible, to allow the variety and terroir to express themselves. We carry out classic white winemaking in small stainless-steel tanks (1-2 tons) without artificial additives for enhancement or clarification. The fresh wine matures and stabilizes with lees contact (Sur-lee method) and is bottled unfiltered to best preserve its character.
A typical expression of the variety, with crisp acidity and a pronounced mineral character. The old vines and the unique microclimate of the area provide a full body, complexity, and delicious fruit.
