From two selected old, pre-phylloxera vineyards over 60 years old, located in the exceptional Fagia region. The vines are situated at an altitude of 650 meters on a slope with intensely calcareous soil. They are traditionally trained in a goblet shape and cultivated organically using biodynamic practices, dry-farmed (without irrigation), with great care and gentle manual methods. The yield is extremely low, at 400 kg per stremma, resulting in grapes with high concentration.
The grapes are hand-harvested in small crates during the early morning or late afternoon hours and transported to the winery in our refrigerated truck to prevent damage and oxidation. Before processing, the grapes are cooled in a cold chamber to better preserve the fruit.
Processing begins with a strict selection process, removing any unhealthy grapes. We vinify only the free-run juice using gentle, minimal intervention methods that allow the grape variety and terroir to fully express themselves.
Fermentation is spontaneous, carried out by the indigenous yeasts present on the grapes, in small-volume stainless steel tanks (1 ton), with no artificial additives for enhancement or clarification. The young wine matures and stabilizes on its lees for six months and is bottled unfiltered to best preserve its character. The final wine contains very low sulfites, with total sulfites not exceeding 35 mg/L.
A gastronomic Robola with an expressive floral character, full body, and a particularly savory finish. Clean and true to type, it beautifully reflects the power of old vines and the excellence of its region.
