From a beautiful, single, organically farmed vineyard in the exceptional region of Lakomatia. The vines are planted at 650 meters altitude on a steep slope with intensely calcareous soil. Trained in the traditional goblet shape, the vines are cultivated organically and dry-farmed with great care and gentle manual methods.
In this outstanding location, the vineyard is exposed to cooling breezes from all directions throughout the day. The grape yield is extremely low, up to 400 kg per stremma, resulting in grapes of high concentration.
The grapes are hand-harvested in small crates during the early morning or late afternoon hours and transported to the winery in our refrigerated truck to prevent damage and oxidation. Before processing, the grapes are cooled in a cold chamber to better preserve the fruit.
The process begins with strict sorting, removing any unhealthy grapes. We vinify only the free-run juice using neutral selected yeasts, gentle methods, and the most natural, minimal-intervention approach possible to allow the variety and terroir to express themselves.
We carry out classic white vinification in small-volume tanks (1–2 tons) without any artificial additives for enhancement or clarification. The young wine matures and stabilizes with six months of lees contact and is bottled unfiltered to best preserve its character.
The soils of this particular vineyard contain a high percentage of marl, imparting a bold character with high acidity and intense minerality. In this unique vineyard, the vines coexist with thyme and various wild herbs, resulting in a rare Robola of high expression with pronounced botanical notes.
